Flavor Holder is a natural water-soluble antioxidant obtained by water extraction and purification of coffee beans. The active ingredient is polyphenol composed mainly of chlorogenic acid. It dissolves transparently in water and increases the stability of color and flavors against light.
Can be used to help prevent colors and flavors from deteriorating by light. There are also Flavor Holders with various color combinations. These products can be used in beverages, jellies, frozen desserts, yogurts, and confectioneries.
